2-Hydroxyisoflavanone dehydratase is a dehydratase that catalyzes the final step in formation of the isoflavonoid skeleton, converting 2,4',7-trihydroxyisoflavanone into daidzein and water, and 2,4',5,7-tetrahydroxyisoflavanone into genistein and water. The reaction also occurs spontaneously. It appears in viruses and cellular organisms. Structurally it is a BAHD-like or short-chain dehydrogenase-fold isoflavonoid dehydratase.
