Acetylcholinesterase is the nerve-termination acetylcholine-hydrolyzing serine hydrolase. It hydrolyzes acetylcholine with water, releasing choline and acetate, terminating cholinergic neurotransmission; it also acts on other acetic esters and catalyzes transacetylations. It occurs in viruses and cellular organisms.
