Alditol oxidase is a monomeric FAD-containing oxidase from Streptomyces sp. IKD472 and Streptomyces coelicolor, with one FAD per protein molecule. Xylitol (5 carbons) and sorbitol (6 carbons) are the preferred substrates, but it also acts on other alditols such as L-threitol, D-arabinitol, D-galactitol and D-mannitol, oxidizing an alditol to the corresponding aldose while reducing O2 to H2O2.
