Definition:

EC Tree > 5 Isomerases > 5.1 Racemases and epimerases > 5.1.3 Acting on carbohydrates and derivatives > 5.1.3.3 Aldose 1-epimerase
Aldose 1-epimerase (mutarotase) also acts on L-arabinose, D-xylose, D-galactose, maltose and lactose. It catalyzes the first step of galactose metabolism by converting β-D-galactose into α-D-galactose, the substrate for EC 2.7.1.6 galactokinase. It interconverts α- and β-D-glucose. It is found in Bacteria, Eukaryota and Archaea. Structurally it is an aldose 1-epimerase.
