Anthocyanidin synthase
Definition:
EC Tree > 1 Oxidoreductases > 1.14 Acting on paired donors, with incorporation or reduction of molecular oxygen > 1.14.20 With 2-oxoglutarate as one donor, and the other dehydrogenated > 1.14.20.4 anthocyanidin synthase
Anthocyanidin synthase is an Fe2+/ascorbate 2-oxoglutarate oxygenase that hydroxylates C3 of leucoanthocyanidin followed by trans-diaxial elimination and dehydration to anthocyanidins (in vitro epimerizes to dihydroflavonols such as taxifolin, and can further oxidize them to flavonols).
