Acetylornithine deacetylase is a hydrolase found in eukaryotes, bacteria and archaea that also hydrolyzes N-acetylmethionine. It hydrolyzes N2-acetyl-L-ornithine into acetate and L-ornithine. In arginine biosynthesis it removes the acetyl protecting group. It features a deacetylase fold.
