Avenacosidase
Definition:
EC Tree > 3 Hydrolases > 3.2 Glycosylases > 3.2.1 Glycosidases, i.e. enzymes that hydrolyse O- and S-glycosyl compounds > 3.2.1.188 avenacosidase
Avenacosidase is a saponin-activating beta-glucosidase isolated from oat (Avena sativa) seedlings, which hydrolyses avenacoside B into 26-desglucoavenacoside B and D-glucose and also acts on avenacoside A; the deglucosylated product is the fungitoxic defence compound that acts against fungal infection. By converting the non-toxic avenacoside storage form into the active antifungal aglycone upon tissue damage it forms part of the oat chemical-defence system. It appears in viruses and cellular organisms.
