Beta-agarase is a marine endoglycosidase from the marine bacterium Zobellia galactanivorans that also acts on porphyran, more slowly; it cleaves the beta-(1->4) linkages of agarose randomly with retention of the anomeric-bond configuration, producing beta-anomers that mutarotate progressively toward alpha; end products of AgaA are neoagarotetraose and neoagarohexaose, while AgaB gives neoagarotetraose and neoagarobiose, so the predominant product is the tetramer. By digesting red-algal agarose it supports marine bacterial utilisation of agar. It is distributed across Bacteria, Archaea and Eukaryota.
