Beta-galactosidase is a galactose-releasing exoglycosidase that hydrolyses terminal non-reducing beta-D-galactose residues in beta-D-galactosides; some enzymes also hydrolyse alpha-L-arabinosides, and some animal enzymes also hydrolyse beta-D-fucosides and beta-D-glucosides (cf. lactase EC 3.2.1.108). By cleaving lactose and beta-galactoside glycans it digests dairy lactose and remodels galactose-containing glycoconjugates. It appears in viruses and cellular organisms.
