Cellobiose epimerase
Definition:
EC Tree > 5 Isomerases > 5.1 Racemases and epimerases > 5.1.3 Acting on carbohydrates and derivatives > 5.1.3.11 cellobiose epimerase
Cellobiose epimerase interconverts D-glucose and D-mannose residues at the reducing end of β-1,4-linked disaccharides by epimerizing C-2 of the glucose moiety, converting cellobiose into 4-O-β-D-glucopyranosyl-D-mannose. It is found in Bacteria and Eukaryota. Structurally it is a cellobiose 2-epimerase.
