Chitinosanase

Definition:

EC Tree > 3 Hydrolases > 3.2 Glycosylases > 3.2.1 Glycosidases, i.e. enzymes that hydrolyse O- and S-glycosyl compounds > 3.2.1.229 chitinosanase
Chitinosanase is an endohydrolase found in the culture medium of the plant-pathogenic fungus Alternaria alternata, which cleaves after the GlcN-GlcNAc diad in partly acetylated chitosan with subsite -2 specific for GlcN and subsite -1 specific for GlcNAc, hydrolysing Xm-(1->4)-beta-D-GlcpN-(1->4)-beta-D-GlcpNAc-(1->4)-Xn into Xm-(1->4)-beta-D-GlcpN-(1->4)-alpha-D-GlcpNAc and Xn; it does not cleave fully deacetylated chitosans (acted on by chitosanases EC 3.2.1.132 and glucosaminidases EC 3.2.1.165) or fully acetylated chitins (acted on by chitinases EC 3.2.1.14, 3.2.1.200, 3.2.1.201, 3.2.1.202 and N-acetylglucosaminidases EC 3.2.1.52). By recognising the mixed acetylation pattern it specifically degrades partially acetylated chitosan.
