Chitosanase is a glycoside hydrolase that endohydrolyses beta-(1->4)-linkages between D-glucosamine residues in partly acetylated chitosan; a whole spectrum of chitosanases is known, and the only constant property is endohydrolysis of GlcN-GlcN links, which is common to all known chitosanases, while most additionally recognise GlcN-GlcNAc or GlcNAc-GlcN links (but not both) and none recognises GlcNAc-GlcNAc in partly acetylated chitosan. By breaking the beta-1,4-glucosamine backbone it supports microbial utilisation of chitosan, fungal cell walls and chitosan-based biomaterials. It is distributed across Eukaryota and Bacteria.
