Cyanophycinase is a highly specific serine-type exopeptidase in family S51, specific for the branched polypeptide cyanophycin and not hydrolysing poly-L-aspartate or poly-L-arginine; it hydrolyses [L-Asp(4-L-Arg)]n plus water into [L-Asp(4-L-Arg)]n-1 and L-Asp(4-L-Arg), i.e. the beta-Asp-Arg dipeptide. By degrading the nitrogen-storage cyanophycin granule it releases beta-aspartyl-arginine during nitrogen starvation.
