Dextransucrase is a glucansucrase that transfers a D-glucosyl residue from sucrose onto a growing (1->6)-alpha-D-glucan chain, releasing D-fructose and extending the chain by one alpha-(1->6)-linked glucose unit. Classified by the linkage formed, this enzyme extends the glucan by an alpha-(1->6) linkage. It occurs in Bacteria and Eukaryota and synthesizes dextran, the alpha-(1->6)-linked glucan used as a bacterial exopolysaccharide and in industrial gums.
