Extracellular agarase is a secreted marine endoglycosidase that hydrolyses 1,3-beta-D-galactosidic linkages in agarose, giving the octamer as the predominant product. By degrading extracellular agarose it supports marine bacterial utilisation of red-algal agar. It appears in viruses and cellular organisms.
