Ferulate hydratase/lyase
Definition:
EC Tree > 4 Lyases > 4.1 Carbon-carbon lyases > 4.1.2 Aldehyde-lyases > 4.1.2.65 ferulate hydratase/lyase
Ferulate hydratase/lyase is a chloroplastic two-step enzyme from vanilla pods of the orchid Vanilla planifolia. It hydrates ferulate into 3-hydroxy-3-(4-hydroxy-3-methoxyphenyl)propanoate and then cleaves this beta-hydroxy acid by retro-aldol into vanillin and acetate; it also converts ferulic acid 4-O-beta-D-glucopyranoside into vanillin 4-O-beta-D-glucopyranoside. It is a key enzyme of vanilla flavor biosynthesis. Structurally it is an enoyl-CoA-hydratase-fold (non-CoA) enzyme.
