Flavonol synthase is an Fe2+/2-oxoglutarate-dependent dioxygenase that desaturates dihydroflavonols to flavonols; the Citrus unshiu enzyme also trans-3-hydroxylates (2S)- and (2R)-naringenin to kaempferol/dihydrokaempferol.
