Fructan beta-fructosidase is a broad exofructosidase that hydrolyses terminal non-reducing (2->1)- and (2->6)-linked beta-D-fructofuranose residues in fructans, acting on inulin and levan and also sucrose. By releasing fructose it completes microbial breakdown of both inulin-type and levan-type fructans. It is distributed across Bacteria and Eukaryota.
