Fruit bromelain is a cysteine endopeptidase from the pineapple plant Ananas comosus, scarcely inhibited by chicken cystatin. It hydrolyzes proteins with broad specificity for peptide bonds; Bz-Phe-Val-Arg-NHMec is a good synthetic substrate, but it shows no action on Z-Arg-Arg-NHMec, unlike stem bromelain. A related enzyme, pinguinain, is obtained from Bromelia pinguin but is inhibited by chicken cystatin. In the fruit it contributes to ripening and protein mobilization. It features a papain-like catalytic fold.
