Galactarate dehydratase is an enolase-superfamily dehydratase. The enzyme from E. coli is specific for galactarate, dehydrating it into (2R,3S)-2,3-dihydroxy-5-oxohexanedioate and water; the enzyme from Salmonella typhimurium also acts on L-talarate (cf. EC 4.2.1.156). It is compared with EC 4.2.1.158 (D-threo-forming). It appears in viruses and cellular organisms. Structurally it is a metal-dependent galactarate dehydratase.
