Ginsenosidase type I is a Mg2+- or Ca2+-slightly-activated ginsenoside glycosidase that hydrolyses the 3-O-beta-D-(1->2)-glucosidic bond, the 3-O-beta-D-glucopyranosyl bond and the 20-O-beta-D-(1->6)-glycosidic bond of protopanaxadiol-type ginsenosides, usually leaving one glucosyl at position 20 and one or none at position 3; starting from ginsenosides glycosylated at both positions (Rb1, Rb2, Rb3, Rc, Rd) the main products are ginsenoside F2 and ginsenoside C-K with low Rh2. By stepwise deglycosylation it converts major ginsenosides into absorbable minor ginsenosides. It is distributed across Eukaryota, Bacteria and Archaea.
