Ginsenosidase type III
Definition:
EC Tree > 3 Hydrolases > 3.2 Glycosylases > 3.2.1 Glycosidases, i.e. enzymes that hydrolyse O- and S-glycosyl compounds > 3.2.1.191 ginsenosidase type III
Ginsenosidase type III is a ginsenoside-transforming glycosidase that sequentially hydrolyses the 3-O-beta-D-(1->2)-glucopyranosyl bond and then the 3-O-beta-D-glucopyranosyl bond of protopanaxadiol-type ginsenosides; acting on ginsenoside Rb1 it first generates ginsenoside XVII and subsequently ginsenoside LXXV, removing successive glucoses from position 3. By converting major ginsenosides into rare deglycosylated forms it modulates ginsenoside bioavailability and pharmaceutical activity. It is distributed across Eukaryota and Bacteria.
