Hydroperoxide dehydratase (allene oxide synthase) is a CYP74 P450 enzyme that dehydrates unsaturated fatty-acid hydroperoxides into allene oxides. It converts (9Z,11E,15Z)-(13S)-hydroperoxyoctadeca-9,11,15-trienoate into (9Z,15Z)-(13S)-12,13-epoxyoctadeca-9,11,15-trienoate (an allene oxide) and water; the unstable product is acted on by EC 5.3.99.6, allene-oxide cyclase, to form OPDA, the first cyclic bioactive jasmonate precursor. Structurally it is a CYP74A allene-oxide synthase.
