Inulinase is a fructan-degrading endoglycosidase that endohydrolyses (2->1)-beta-D-fructosidic linkages in inulin. By internally cutting the inulin backbone it releases fructo-oligosaccharides and supports microbial utilisation of inulin storage carbohydrates and high-fructose syrup production. It is distributed across Bacteria and Eukaryota.
