Inulosucrase is a fructansucrase that converts sucrose into inulin and D-glucose, transferring a beta-D-fructosyl residue from sucrose onto a growing (2->1)-beta-D-fructan chain and releasing D-glucose. Some other sugars can act as D-fructosyl acceptors. It occurs in Eukaryota, Bacteria and Archaea and synthesizes the (2->1)-beta-fructan inulin used as a storage polysaccharide in plants and as a bacterial exopolysaccharide.
