Isomaltulose synthase simultaneously produces isomaltulose (6-O-α-D-glucopyranosyl-D-fructose) and smaller amounts of trehalulose (1-O-α-D-glucopyranosyl-β-D-fructose) from sucrose. It is found in Bacteria and Eukaryota. Structurally it is a sucrose isomerase.
