Lachrymatory-factor synthase
Definition:
EC Tree > 5 Isomerases > 5.3 Intramolecular oxidoreductases > 5.3.99 Other intramolecular oxidoreductases > 5.3.99.12 lachrymatory-factor synthase
Lachrymatory-factor synthase produces the irritating lachrymatory factor released by onions and related species when chopped; it acts on the product of EC 4.4.1.4 alliin lyase. The Allium cepa (onion) enzyme converts (E)-prop-1-en-1-SO-peroxol into (Z)-propanethial S-oxide, while the Allium siculum (honey garlic) enzyme acts on (E)-but-1-en-1-SO-peroxol. It converts (E)-alk-1-en-1-SO-peroxol into (Z)-alkanethial S-oxide. Structurally it is a plant lachrymatory-factor synthase.
