Levanase
Definition:
EC Tree > 3 Hydrolases > 3.2 Glycosylases > 3.2.1 Glycosidases, i.e. enzymes that hydrolyse O- and S-glycosyl compounds > 3.2.1.65 levanase
Levanase is a levan-degrading endofructosidase that randomly hydrolyses (2->6)-beta-D-fructofuranosidic linkages in (2->6)-beta-D-fructans (levans) containing more than three fructose units. By internally cutting the bacterial and plant levan backbone it releases fructo-oligosaccharides and supports levan utilisation. It appears in viruses and cellular organisms.
