Licheninase is a mixed-linkage beta-glucan endoglycosidase that hydrolyses (1->4)-beta-D-glucosidic linkages in beta-D-glucans containing both (1->3)- and (1->4)-bonds, acting on lichenin and cereal beta-D-glucans but not on beta-D-glucans containing only 1,3- or only 1,4-bonds. By cutting the mixed-linkage cereal beta-glucan it reduces wort viscosity in brewing and supports microbial fibre digestion. It appears in viruses and cellular organisms.
