Linamarin synthase is a cyanogenic-glucoside glycosyltransferase that transfers a glucosyl residue from UDP-glucose onto 2-hydroxy-2-methylpropanenitrile (acetone cyanohydrin), releasing UDP and forming linamarin. It also glucosylates the cyanohydrins of butanone and pentan-3-one. It occurs in viruses and cellular organisms and is the key enzyme of the cyanogenic glycoside pathway in cassava and other cyanogenic plants.
