Mimosinase
Definition:
EC Tree > 4 Lyases > 4.3 Carbon-nitrogen lyases > 4.3.3 Amine-lyases > 4.3.3.8 mimosinase
Mimosinase is a pyridoxal 5'-phosphate protein that degrades the toxic non-protein amino acid L-mimosine. It cleaves a C-N bond, releasing 3-hydroxy-4H-pyrid-4-one and an enamine that tautomerizes to an imine, which hydrolyzes to pyruvate and ammonia. It is thought to have evolved from EC 4.4.1.13 cysteine-S-conjugate β-lyase and occurs in mimosine-producing plants and some bacteria. It is found in Bacteria and Eukaryota. Structurally it is a PLP-dependent C-N lyase.
