Mutansucrase is a glucansucrase from Streptococcus. Like other glucansucrases it transfers a D-glucosyl residue from sucrose onto a growing glucan chain, releasing D-fructose, but extends the chain by an alpha-(1->3) linkage. It is responsible for synthesis of the water-insoluble mutans glucan matrix of dental plaque, which contributes to dental caries.
