Oryzin (aspergillopepsin J) is the predominant extracellular alkaline endopeptidase of the mould Aspergillus oryzae, in family S8 and containing no cysteine, with identical or closely related enzymes produced by A. flavus and A. sojae; it hydrolyses proteins broadly and Bz-Arg-OEt faster than Ac-Tyr-OEt, but does not hydrolyse peptide amides. By digesting proteins in soy-saue and sake fermentation it supports fungal food biotechnology. It is distributed across Eukaryota and Bacteria.
