Palatinase is an isomaltulose-specific glycosidase characterised from Erwinia rhapontici, which hydrolyses palatinose (isomaltulose) into alpha-D-glucopyranose and D-fructofuranose. By splitting the low-glycemic sweetener isomaltulose it supports bacterial utilisation of this sucrose isomer. It is taxonomically restricted to Erwinia rhapontici.
