Pancreatic elastase (elastase I) is a pancreatic serine endopeptidase in family S1 formed by tryptic activation of proelastase from mammalian pancreas (formerly EC 3.4.21.11); it hydrolyses proteins including elastin, preferentially cleaving Ala bonds. By digesting dietary proteins and elastin it completes pancreatic proteolysis. It appears in viruses and cellular organisms.
