Phenylacetaldehyde synthase is a pyridoxal 5'-phosphate protein isolated from Petunia hybrida and a rose hybrid; it produces phenylacetaldehyde directly from L-phenylalanine, is specific for L-phenylalanine and does not accept other aromatic amino acids. It converts L-phenylalanine plus O2 and water into phenylacetaldehyde, CO2, ammonia and H2O2. In floral scent it makes phenylacetaldehyde. It requires PLP.
