Propioin synthase is a thiamine-diphosphate-dependent C-C lyase found in Saccharomyces cerevisiae. It catalyzes the cleavage of 4-hydroxy-3-hexanone (propioin) into two molecules of propanal, and in the reverse direction condenses two propanal molecules into the acyloin product. It is part of the microbial acetoin/acyloin fermentation network. Structurally it is a TPP-dependent decarboxylase-like enzyme.
