Reuteransucrase
Definition:
EC Tree > 2 Transferases > 2.4 Glycosyltransferases > 2.4.1 Hexosyltransferases > 2.4.1.395 reuteransucrase
Reuteransucrase is a glucansucrase characterized from Limosilactobacillus reuteri strain 121. Like other glucansucrases it transfers a D-glucosyl residue from sucrose onto glucan acceptors (including sucrose itself), releasing D-fructose and forming the alpha-glucan reuteran. It forms mostly alpha-(1->4) glucosidic linkages but also alpha-(1->6) linkages, and the presence of maltose significantly accelerates the initial reaction rate. It occurs in viruses and cellular organisms (cf. EC 2.4.1.5 dextransucrase).
