Stem bromelain

Definition:

EC Tree > 3 Hydrolases > 3.4 Acting on peptide bonds (peptidases) > 3.4.22 Cysteine endopeptidases > 3.4.22.32 Stem bromelain
Stem bromelain is the most abundant cysteine endopeptidase in the stem of pineapple (Ananas comosus), distinct from fruit bromelain (EC 3.4.22.33), scarcely inhibited by chicken cystatin and very slowly inactivated by E-64. It belongs to peptidase family C1 (papain family), with broad specificity for cleavage of proteins but a strong preference for Z-Arg-Arg-NHMec among small-molecule substrates. It is widely used as a dietary supplement and anti-inflammatory enzyme. In the plant it contributes to stem tissue remodeling. It features a papain-like catalytic fold.
