Subtilisin (alcalase) is the archetypal bacterial serine endopeptidase in family S8, containing no cysteine (although cysteines occur in homologues); species variants include subtilisin BPN' (subtilisin B, subtilopeptidase B/C, Nagarse, subtilisin Novo, bacterial proteinase Novo) and subtilisin Carlsberg (subtilisin A, subtilopeptidase A, alcalase Novo), with similar enzymes produced by various Bacillus subtilis strains and other Bacillus species; it hydrolyses proteins with broad peptide-bond specificity, preferring a large uncharged P1 residue, and hydrolyses peptide amides. By digesting proteins it is widely used in laundry detergents and biotechnology. It appears in viruses and cellular organisms.
