Sulfofructose kinase is the sulfoquinovose-degradation sulfoglycolytic kinase of E. coli. It phosphorylates 6-deoxy-6-sulfo-D-fructose on the 1-hydroxyl, releasing ADP and 6-deoxy-6-sulfo-D-fructose 1-phosphate, feeding the sulfoglycolytic breakdown of sulfoquinovose — the polar head group of plant/algalsulfolipids and the surface-layer sulfolipid of some archaea. It occurs in viruses and cellular organisms.
