Vanillin synthase
Definition:
EC Tree > 4 Lyases > 4.1 Carbon-carbon lyases > 4.1.2 Aldehyde-lyases > 4.1.2.41 vanillin synthase
Vanillin synthase is one activity of the bifunctional enzyme trans-feruloyl-CoA hydratase/lyase, which converts trans-feruloyl-CoA into vanillin; the other activity is EC 4.2.1.101 trans-feruloyl-CoA hydratase. The enzyme cleaves the beta-hydroxy thioester by a retro-aldol reaction, releasing vanillin and acetyl-CoA. Vanillin is further oxidized to vanillate by EC 1.2.1.67 vanillin dehydrogenase. It is a key biotechnological target for vanilla flavor production. Structurally it is an enoyl-CoA hydratase/isomerase-superfamily enzyme.
