Zerumbone synthase is a plant NAD+-dependent oxidoreductase cloned from shampoo ginger, Zingiber zerumbet. It oxidizes 10-hydroxy-alpha-humulene to zerumbone, a bitter sesquiterpenoid, concomitantly reducing NAD+ to NADH and releasing H+, and participates in zerumbone biosynthesis.
