Zingipain is a cysteine endopeptidase from ginger (Zingiber officinale) rhizome, a member of the papain family. The isoform GP-II contains two glycosylation sites, and the enzyme is inhibited by divalent metal ions such as Hg2+, Cu2+, Cd2+ and Zn2+. It preferentially cleaves peptides with a proline residue at P2. In the rhizome it contributes to protein reserve mobilization during sprouting. It belongs to peptidase family C1.
