Volemitol is the major nonstructural carbohydrate in leaves of all stages of development. Volemitol functions as a photosynthetic product, phloem translocate (phloem-mobile), and storage carbohydrate. Volemitol biosynthesis proceeds by a novel, NADPH-dependent, ketose reductase (sedoheptulose reductase)[1].
