Olive oil-based fat emulsion is composed of olive oil and soybean oil (80:20), and can be used as a nutritional supplement. Olive oil is rich in long chain Omega-9 monounsaturated fatty acids(MUFAs) with fewer polyunsaturated fatty acids (PUFAs) than thefatty acids contained in soybean and fish oil. Olive oil-based fat emulsion avoids the impairment of the immune responseassociated with omega-6 PUFAs and may achieve animmunologically neutral effect.
